Over the course of the past twenty-five years, Bill Sabine has made his mark in the service industry. His passion for hosting and authenticity have landed him a multitude of opportunities, making his way from serving and bartending to running award-winning wine and bar programs for some of the industries biggest hotspots in locations like New York City, Nantucket, New Jersey, Maine and Boston. His assistance in the opening of Dune on Nantucket, as well as, working closely with the Nautilus team shortly thereafter during his time with The Pearl, gave Sabine invaluable experience he then carried over to his latest position as the Bar Manager for Nautilus Pier 4. Sabine takes deep pride in his work, stating: “There's nothing better than hosting people. Whether they've had a bad day and you can help turn it around, or if they come in for a special occasion and you can make it an experience they'll always remember. It’s all about connecting with them over great food, drinks and company.” When he’s not at work, you can find him with his wife, Jess at her cafe, The Rose Room Cafe, or enjoying time with his two kids while practicing one of his many hobbies, including permaculture and regenerative farming, woodworking, leather work, or making his own brand of body products, called The Daily.
